One of the canon Rebel series DSLR's, the xsi, t2i or t3i's are great. Or a Nikon D3000...

IMO, all the DSLR's are complicated. Hell, even old non-digital SLR's are complicated. Best thing you can do is enroll in a community college photography or digital photography class. Depending on the class they might have student camera's for you to use for the duration of the class, or offer some sort of student discount through local camera/photo stores.
I just got a Canon Rebel T3i, and I dont remember jack shit from high school photo classes. Thinking about getting into a digital photo or video class myself.

^+1 You first have to understand photography. Any entry level will be complicated when shooting in anything other than full auto mode. Understanding depth of field or aperture and shutter speed should be your first priority. Or just get a point and shoot!
