That all depends... A single cylinder carbed bike will for sure be smoother than a multi-cylinder injected bike with un-synced throttle bodies. After syncing up my TB's my 636 is as smooth as glass. Also when you get a carbed bike up high, you're going to start leaking fuel out of the vent lines. That can get kind of annoying sometimes but isn't too big of a deal.
If you want to learn exactly where balance point is, especially on a dirtbike/sumo start from a stop with your left foot down, clutch up, and fag drag. Super easy to balance, and easy to bail if you freak out without hurting yourself. I taught two of my friends, one who couldn't even wheelie before, to almost hit BP on their dirtbikes after only about an hour of practice. Once you start cruising with your foot down fairly well, start picking your foot up and see how long you can keep going like that. It's all about brake control and being smooth with the throttle.
