Looking to Enlist for Air Force but I'm Job Locked

So yeah I'm done with high school. I know what I want to do with the rest of my life. I want to weld. I do have experience as a welder.

Now I'd like to attend technical school, and some probably other college courses like math, and science and I do want to serve in the Air Force for these reasons:
-I want a better education, and the Air Force seems like the best branch that offers the best education benefits such as, Air Force Tuition Assistance
-I want to travel the world a bit, but only for short periods. Air Force has some of the shortest deployments
-I can't afford to put myself through school as a civilian, and I don't want to get myself in debt with loans.

Now I'm kind of job locked. I'd like to get in Aircraft Metals Technology, but I hear Air Force already has enough people coming to them for enlistment and they tend to turn away people that want a specific job in the Air Force. But this job is the one I'd find really enjoyable for me while being in active duty. Hell, I'd re-enlist if I like it enough.

I haven't talked to a recruiter yet, was looking to go within the next week or two. Should I just explain my situation and see what the recruiter thinks? Or not even bother telling him what job I want, cause I hear that's all handled down at MEPS.
