MY suggestion for a first bike to most people is a ex500/ninja 500R there cheap easy to work on and if you drop it parts are cheap.....take it my first bike was a older zx6 but thats besides the point lol

Right now I own a dual sport Suzuki 400 drz and a sport touring bike Honda 800 VFR. And in 38 years of riding I've owned or ridden everything in between. And I don't really have an answer to which bike is most stable. Stability is situational (full on sport bikes are very stable) and not really the answer to staying out of trouble. Being a safe rider is 100% in your attitude and experience.
I hate v-twin cruisers. I think dollar for dollar, pound for pound, cc for cc they are the worst class of bike. They are all about looking and sounding certain way and performance comes in as a distant third priority.
My personal favorite bikes for beginners are.
As a retro bike the Triumph Bonneville.
Dual sport, the Suzuki 400 Drz or Kawasaki 650 klr
A great all around the Suzuki bikes
But there are lots of other perfectly fine bikes out there for a beginner. I of course recommend getting a cherry used bike.
